Chicken soup

Difficulty level: easy

Ingridients

  • 8 cups of chicken stock with carrot
  • chicken pieces
  • potato
  • thin soup noodles

Method

  1. Bring chicken stock to near boil
  2. Add peeled and cubed potato pieces; cook until potato are fork tender
  3. Add soup noodles, cut up carrot, and shredded chicken
  4. Cook for 5 minutes and turn the heat off
  5. Taste and adjust for salt and pepper
  6. Add chopped dill just before turning off the pot (optional)

Tips

  • Salt carefully, tasting after each additional pinch, taking care not to overseason, but keep salting until the flavour is bright and tasty
  • You can easily adapt this basic soup recipe to your taste by adding various chopped veggies such as broccoli or peas; or by adding different herbs to suit your palate – parsley, thyme, or dried herbs all work well.
  • Serve this soup with pirozhki on the side for a hearty meal.
